In the heart of St Remy de Provence, Mr Vanbeeck uses basic products to make pâtisserie, biscuits and sweets based on recipes taken from old books. His craftsman's passion brings some exceptional flavours back to life, from the astonishing savoury sablé with thyme, fennel or rosemary to the calisson shaped like a small slab, via the triangle of nougatine with buttercream and caramel crunch.
