Laurel’s classes are led by chef Stephanie and take place in our own fully-equipped restaurant kitchen in the charming provençal village of Fontvieille.

Class topics range from fundamental culinary skills, full meal preparation, visits to local marchés and tours of artisan workshops. All classes end with a shared meal around our communal table. Classes are offered at Laurel or in your kitchen! Private chef services are available upon request.

Our Signature Course

Market Tour and Lunch - subject to market times
When you think of Provence, you think of lavender, rosé, bright sunshine and markets. Is there anything more Provençal than a small village market on a sunny morning? The smell of slow-roasting chicken, bowls of plump olives, pesto and tapenade, whiffs of freshly-baked fougasse filling the air. Let's be honest, this is why you came to Provence!

Together we'll take a tour of the market, stopping to chat with the traders and farmers to learn a little more about their products, sampling a few along the way and shopping for a fresh, authentic Provençal lunch. You'll learn about local produce, how to choose fresh, seasonal ingredients and the folklore surrounding local products.

The menus change according to the ingredients available and the seasons. One thing's for sure, we'll finish with a gourmet lunch accompanied by local wines.

Please note that classes take place in *your* kitchen.

The How-To series highlights typical French dishes, meals and customs. These authentic moments around the table are ultimately what give us the best memories of a meal. They spice up our holidays by adding a local flavour and stay with us long after we return home. The themes of the How-To series are constantly changing. Don't hesitate to contact us to find out what's on the menu.

In the How-To: Cheese course, you'll learn about the different types of French cheese, regional specialities and the basics of presenting, cutting, storing and buying cheese. You'll leave knowing how to prepare a delicious cheese platter and a few tips on how to make it even better. I'll also teach you the rules of cutting and presentation so that you'll have no doubts at your next dinner party.

How-To: Apéro

How-To: Apéro will teach you how to become an Apérpro! The Apéro (short for aperitif) is when the good times begin. It's the ‘entrance’ to the evening and mealtime in France. Many cultures have a similar practice (happy hour, anyone?) and an apéro is always prepared by the host with his guests in mind.

In this course, you'll learn how to prepare 2 aperitif cocktails (or non-alcoholic cocktails), how to serve and match the right wine, how to put together a gourmet assortment and some easy presentation tips.

La Base courses
The La Base series focuses on the fundamentals of cooking. These courses are designed for enthusiastic cooks looking to gain confidence or integrate new skills into their everyday cooking.

La Base: Knife Skills
In our La Base: Knife Skills course, students will learn a variety of cuts as well as how to sharpen their knives at home. We'll take time to practise each cut on different fruits and vegetables, and cook at the end of the course to enjoy the fruits of our labour... How about a little pistou soup?
