Joël Durand has opened up his chocolate workshop In St Remy de Provence. He proposes a unique principle, the chocolate alphabet. Each letter corresponds to a very specific composition and texture. It is also possible to taste an entire range of 30 different specialities. Each square covered in dark chocolate offers a first contact with 'raw cocoa' in preparation for the tasting.
