MOULIN SAINT MICHEL: Over 71 medals and awards since 1975
This is a family-run mill that has been harvested by Alpilles olive growers for 3 generations. Lover of the ‘fruité vert’, the mill master, Laurent Rossi, performs a first and only cold extraction to always obtain a quality classified as extra virgin. He composes his oils by blending the main varieties of olive from the Vallée des Baux-de-Provence: Grossane, Salonenque, Verdale and Berruguette, so that they sublimate the flavours of the dishes for which they are intended. In every drop of these olive oils, there is a piece of his country, a piece of his heart and his passion.
